So it’s Friday night and I’m about to watch Jessica Jones on Netflix, and I need a snack, right? But I’m craving chocolate and I’m in no mood to go to the store to pick up Chips Ahoy. What do I do? I make my own cookies. And you can bet your ass they were better than store-bought ones.
- 6 Tbsp (1oz/30g) margarine
- 8 Tbsp light brown sugar
- 1 pinch salt
- 1 whisked egg
- 3/2 tsp vanilla extract
- 15 tbsp all-purpose flour
- 1/4 tsp baking soda (this is a ½ of a ¼ tsp)
- 12 tbsp chocolate chips
- 3 Tbsp unsweetened cocoa powder (this was an afterthought because when I tasted the cookie batter it was too sweet, so I tried to tone it down with this)
Preheat the oven to 350° F / 180° C
Melt the butter (15 sec in the microwave was enough for me)
Add the sugar, salt, and vanilla to the melted butter and whisk well
Whisk the egg, then add to the previous mixture (make sure the butter is not hot, merely warm)
Dump the flour and baking soda to the previous mixture just until combined. You don’t want to overdo it or your cookies will be too tough. You also don’t want any lumps of
Add the chocolate chips and combine
My dough was too sweet (yes, there is something as too sweet) so I added the unsweetened cocoa to bring it down a notch.
Then I put them on a tray and into the oven for 17 minutes.

I might try to add less sugar next time but considering I just invented this recipe (by modifying like three different recipes), it turned out fantastic. Reminder to myself: One less tablespoon of sugar and add one more of cocoa powder.
Honestly, this took more time in the oven than the time it took me to mix everything. This is a perfect recipe if you have guests and nothing to offer them and you want to impress everyone with your culinary skills 🙂
